If you’re staring at piles of leftover Thanksgiving turkey and wondering what to do with it, this recipe is about to become your new favorite tradition. These Leftover Turkey Meatballs use only ALDI ingredients, come together quickly, and are perfect as appetizers, dinner, or a cozy crockpot dish for busy weekends.
What makes these so good? The instant stuffing adds incredible flavor, the broth keeps everything tender, and finishing them in gravy makes them unbelievably comforting. They’re also great made ahead—the flavors get even better overnight!

Ingredients (all from ALDI):
5 cups leftover cooked turkey, shredded (I used my Cuisinart shredder)
1 box ALDI instant stuffing mix (I have used regular or the Hawaiian Rolls stuffing mix
3–6 eggs (start with 3, add more if needed)
1 cup shredded cheese (your choice)
½ cup shredded Parmesan
½–1 cup leftover turkey broth (add as needed for moisture)
Bread crumbs (optional, to thicken if mixture gets too wet)
1 jar ALDI turkey gravy
Spray oil
1–2 tablespoons butter
Instructions
1. Shred the turkey
Use a food processor or shredder attachment to break down your leftover turkey into fine shreds.
2. Mix everything together
In a large mixing bowl, combine the shredded turkey, instant stuffing, shredded cheese, Parmesan, and 3 eggs to start.
3. Adjust for texture
Add turkey broth until the mixture resembles meatloaf.
Too dry → add more broth or another egg
Too wet → sprinkle in breadcrumbs to thicken
4. Form into meatballs
Roll the mixture into balls and place them on a cookie sheet.
5. Brown for flavor
Heat a skillet with spray oil and 1–2 tablespoons of butter. Brown the meatballs on all sides and place them back onto the baking sheet.
6. Cook through
Choose your method:
Air Fryer: 15–20 minutes at 375°F
Oven: 20–25 minutes at 375°F
7. Add to gravy
Transfer the cooked meatballs to a crockpot and pour in a full jar of turkey gravy. Keep on warm until serving.
Make-Ahead Option for Leftover Thanksgiving Turkey Meatballs
These meatballs are delicious fresh—but even better the next day. Store them in a container covered with the gravy overnight. The flavors soak in, and reheating them in the crockpot makes serving effortless.
